J\u00e1 aconteceu isso com voc\u00ea?<\/p>\n<p>Se o seu chocolate ou cobertura estiver no formato de gotas, \u00e9 muito prov\u00e1vel que isso resulte do pr\u00f3prio atrito de uma gota com a outra. Mas em alguns casos de gotas e nas barras, trata-se de um processo natural do chocolate, que se chama <em>fat bloom<\/em> (do ingl\u00eas, \u201cflorescer da gordura\u201d).<\/p>\n<h3>Por que o Esbranqui\u00e7ado Acontece e Como Lidar com Ele<\/h3>\n<p>Acontece que as gorduras presentes nos chocolates e coberturas tendem a migrar para a superf\u00edcie quando ocorre varia\u00e7\u00e3o de temperatura. \u00c9 interessante notar que, durante o nosso outono\/inverno, esse problema se intensifica, pois a pr\u00f3pria temperatura do dia varia muito: friozinho de manh\u00e3, sol e calor intenso ao meio-dia, frio de noite&#8230;<\/p>\n<p>Essa migra\u00e7\u00e3o pode ocorrer em diversos momentos:<\/p>\n<ul>\n<li>No estoque ou na g\u00f4ndola de lojas: repare se os produtos est\u00e3o em local fresco e sem tomar luz do sol diretamente antes de comprar!<\/li>\n<li>Durante o transporte: se carro est\u00e1 quente, por exemplo. Por isso, o ideal \u00e9 fazer as compras em hor\u00e1rios mais amenos e transportar o chocolate ou a coberturas sempre na frente, com o ar condicionado ligado. Evite lev\u00e1-los no porta malas!<\/li>\n<li>No pr\u00f3prio ambiente de casa: se o local em que o chocolate fica tem varia\u00e7\u00e3o de temperatura. Por isso, o ideal \u00e9 armazenar as coberturas e chocolates em local arejado e ao abrigo do sol!<\/li>\n<\/ul>\n<p>Mas esse fen\u00f4meno torna o chocolate inadequado para o uso? A resposta \u00e9: n\u00e3o! O <em>fat bloom<\/em> n\u00e3o torna, de nenhuma maneira, o chocolate impr\u00f3prio para o manuseio. Voc\u00ea pode derret\u00ea-lo e moldar, fazer ganaches e os seus doces normalmente!<\/p>\n<p>Agora, vale a pena ressaltar que nem todo esbranqui\u00e7ado \u00e9 <em>fat bloom<\/em>. Por isso, sempre que notar o car\u00e1ter esbranqui\u00e7ado, siga essas recomenda\u00e7\u00f5es:<\/p>\n<ul>\n<li>H\u00e1 algum odor fora do comum no seu chocolate? Se sim, reserve o produto e a embalagem e entre em contato conosco.<\/li>\n<li>Se n\u00e3o h\u00e1 odor, passe o dedo pelo esbranqui\u00e7ado. Ele sai, deixando o chocolate \u201cliso\u201d e o seu dedo levemente gorduroso? Se sim, provavelmente \u00e9 um caso de <em>fat bloom<\/em>. Por\u00e9m, se voc\u00ea sentiu uma textura granulosa no esbranqui\u00e7ado, como pequenos cristais, use o chocolate apenas para fazer recheios e ganaches, pois esses pequenos cristais s\u00e3o de a\u00e7\u00facar e impedir\u00e3o uma moldagem correta.<\/li>\n<\/ul>\n<p>Sempre que tiver d\u00favidas ou problemas, reserve o produto e a embalagem e entre em contato conosco pelo telefone, por e-mail ou pelas redes sociais.
